Sunday Dish: Fajitas!

Everyone loves fajitas! But, the amount of ingredients can totally be daunting. Don’t worry. They aren’t THAT hard. Here’s an easy recipe for fajitas. You can make veggies, shrimp, chicken, steak or whatever else you’re craving!

Ingredients:
- 1 medium size white or red onion

- 2 medium size green peppers

- 2 medium size red peppers

- optional: one small tomato, 1 package of mushrooms

- 1 lime

- 1 packet of fajita mix

- 1 box of Spanish rice

- 1 can of corn kernels

- 1 bag of corn or flour tortillas

- 1 jar of salsa

- 2 small things of guac (or make your own! super EASY)

- optional: chips!

- Shrimp - 5 deveined and cleaned shrimp per person

- Chicken - one breast per person

- Steak - 4-5 oz per person

RICE!
Start rice first as it takes the longest

CORN
1. Set oven to 325
2. Empty and drain corn and dump onto a lightly oiled baking sheet
3. Sprinkle kosher salt on them
4. Cook for 20 mins or so, until you can smell it. You can crank the heat to 350 in the last 5 mins or so if they aren’t getting darker.

CHECK ON RICE!!! Don’t forget about it!!

 

PEPPERSONIONS

VEGGIES
1. Take peppers and make sure the tops are facing up. Cut from top to bottom on each side and pull out all the white stuff and seeds
2. Take each quarter and lay them skin side up
3. Slice from top to bottom making long strips like smiley faces. Make them all the same size or the cooking time will be different. Thinner is better!
4. Take onion and cut both ends off so it doesn’t slide around. Cut it in half from top to bottom to create two halves like an apple. Rinse under cold water so you don’t cry.
5. Place onion halves skin side up again and slide the same way you did peppers. You can choose to pull the core out if you want.
6. Using the same pan as the protein without cleaning it (all that yummy flavors). Put all the veggies in the pan. If you opted in for mushrooms and tomatoes those go in now too
7. Once veggies are in make an “s” and circle with oil again and put on medium heat
8. Add your fajita mix! Mix mix mix them up!
9. Put a lid on the veggies to let them start steaming. Let this sit for about 3-4 mins
10. Life lid and stir again. Does it smell yummy??? Keep them on until onions become transparent and peppers are a bit soft. Add ground pepper if you want!
11. Once veggies are done and put aside, throw the protein back on to catch all the flavors and get warmed up

GUAC

Serve tortillas on side, rice in bowl, corn in bowl, veggies on plate with protein laid on top. Salsa and guac in bowls on the side. Slice the remaining half of lime into four slices to squeeze on top!
